- 1 head cauliflower
- 2 jalapeno peppers
- 1 med sweet onion
- 1/3 can coconut milk
- lots of garlic
- spices (garam masala, s&p)
- We have been known to use bacon!! Imagine that!
- We have also been known to use ghee giving it a creamy spicy smoothness
For the jalapeno cauli start by bringing a pot of water to a boil. Break the cauliflower up into florets and place in the boiling water until they are soft. Once soft, remove and place in a food processor and process until it reaches a creamy texture. As that is happening heat another skillet to low-med heat and toss in 3 cloves of minced garlic, 1 minced onion, 2 sliced jalapenos, and some s&p. Sautee for 2-3 minutes and then add in the coconut milk. Sautee for another 5-6 minutes and then throw in the creamy cauliflower. Cook for another 5 minutes on low to let all the flavors blend and SERVE!
